译者好像根本不知道什么是“烤麸”,就拆开来翻译,将“烤”译成roasted,将“麸”译成bran。英语bran的意思是the outer covering of grain which is left when the grain is made into flour,就是小麦磨成面粉筛过以后剩下的麦皮和碎屑,俗称“麸皮”或“麸子”。Bran 不是食物,无法烤制,更无法脱水。
其实,烤麸是一种面筋。而面筋的英语说法是gluten,即“a sticky substance that is a mixture of two proteins and is left when starch is removed from flour, especially wheat flour”。
