炒菜可以用fry 表示,也可以用stir fry 有时直接用 with
比如: 青椒炒肉丝--shredded pork with green pepper

在國內，好像fry和stir-fry都可以，但在美國，反正我工作過的餐廳里，如果說fry，他們會理解為炸，很奇怪。

没有什么奇怪的，fry的原意本来就是在热油中煎炸。

Longman Dictionary of Contemporary English:
fry  verb (I, T)
to cook something in hot fat or oil or to be cooked in hot fat or oil.

朗文词典上的煎荷包蛋图例解说就是：fried egg；而炒鸡蛋图例解说却是：scrambled eggs.

另外，Merrian-Webster这本美国词典，单词解释是按词义最初使用的历史时期先后编排的。这本词典上说fry这个单词在英语中的使用最早是在13世纪，来自于古法语和拉丁语。而在法语中，即便是今天，单词的含义依然是油炸油煎。

相信大家都知道麦当劳的炸薯条吧，美国人怎么说的？french fries. 由此可见一斑。

炸 在新华字典上虽然给出了英语的相应词 stir-fry，但是所给出的例句没看见有一个是用stir-fry这个词翻译的，这说明了什么？无需明说吧。

Right answer for your question, I think, because the meaning in french is just the explaination of 炒。
